Week 1 of 52 pantry/grocery challenge

 I have a goal this year of only spending 3000 OR LESS on groceries while also using up things in my freezer/pantry. I am going to keep a list of what I spend each week/month as well as a meal plan (and then recap it each week to see how we actually did). 


I spent 36.23 at Aldi.


On the menu this week:

Saturday- Porterhouse steak from the 1/2 cow we bought earlier in 2022.

Sunday: Chicken and veggies

Monday: Meat loaf muffins and roasted veggies

Tuesday Mini Mediterranean Chicken Skewers

Wednesday Breakfast Taco Bowls

Thursday Leftovers

Friday- Fish

Saturday Duck with Brussel sprouts 


That is the plan and I cannot wait to update this to see what I have actually spent.

Overall, I would have to give myself a B or B+ were there some things I could have done better, well yeah, but overall given all of the challenges of the year, I would say I did a good job.

Goals for 2023

 My theme word for 2023 is Adventure and to that end, I have some goals for 2023:

Adventure

Take a trip with a girlfriend to NYC and see a play in January

Go camping

Go fishing

Hike the Billy Goat Trail


Health

Beat the you vs the year 2023

Eat 75 %  AIP

Get down to 155 before the wedding in June


Financial

Save 60k in long term emergency fund

Read ten books I already own

Only spend 3000 on groceries for the year

Pay extra down on the house


Spiritual

Read six spiritual books

Meditate daily

Progress!

 Today, I was able to walk two miles in the morning and one mile in the evening! I did have to have one small nap and a sneeze made me feel quite a bit of pain LOL (taken down by a sneeze).

New Lease on Life

 On 10/28/2022, I had surgery to remove fluid from the pleural lining of my lung. I had to stay in the hospital for a few days, but even after the surgery I felt so much better. When I came home, I had a drain that removed the fluid still in my lung. I had that drain in place for the last week and a half. It hurt to move, it hurt to sleep and if anyone touched that area, it would not go well.

Today, I had the drain removed. The removal process was not fun, I don't think anything worthwhile is ever 100% entirely fun. For a few hours after, the process was not fun. 

About 10 hours after the removal, I feel like I have a new lease on life. 

My pain went from a 6-8 to about a 4. Even better, I can sit without a lot of pain and discomfort.

Please understand, I still have pain, but I also have a new lease on life.

Life Update

 In the last few months, this blog has sat in the wayside as I have dealt with some health issues. In May of this year, I found out that I had some blood collected in the lining of the lung. Since that time, I have had a PET scan, mamogram, breast biopsy, pelvic ultrasound and colonoscopy (this does not include all of the CT scans). Cancer has been ruled out, thankfully. 

I am still in a lot of pain and am looking forward to the surgery that has thankfully been approved by the insurance company. Woo hoo

Surgery date is 10/28/2022.

This last week has been crazy. Since I was in the hospital, I feel like I have just been in survival mode. I am tired of that and I am picking myself up off the mat.

2. Try to get under 170 by 12/31/2022- I will weigh myself once per month on the first weekend of the month

Hospitals and other fun things

 So, I had another pleural effusion and so now I have a lot of ologists in my life again. Pulmonologist, Rheumatologist, you pick an ologist and I now have one in my life.


I don't think I will get away from keeping them out of my life until we figure out what is causing these things. Hopefully, we will be able to remove at least one of these from my life.

I have decided to blog my way through this as it is the only thing that will help me to remember all of this junk.   

Week 20 of 52 recovering from the hospital edition.

 I have been spending time getting over being in the hospital. The nice thing about being in the hospital was that you get a chance to think. The bad thing is... well you are in the hospital.

Fort McHenry Write up

 I did not expect Fort McHenry to be as cool as it actually was. There was history, water and sentimentalism. As you stand on the earthworks and the tops of the works, you can almost see the 40 English ships out in the harbor and the rockets red glare and the bombs bursting in air.

It was such a pretty day (43 degrees and sunny). 


At only 15 dollars, it was surely worth the expense and the trip.

Reminders and Resets

 I recently received a reminder as to why I eat the way that I do. I ran out of prepared food on Friday and decided to treat my self!! Is that supposed to be "Treat Yo Self" either way... I decided to splurge on Some Indian Food. That is when I realized that maybe there is a reason that I eat the way that I do. All Friday and most of today I felt "off."

To counteract this, I decided to make quite a bit of food.

I made some new foods:

Red Wine Pasta Sauce

Broccoli "Cheese" soup (spoiler, I did add real cheese so it is not totally AIP)

Taco bowls- (I followed the recipe exactly, but I did add some rice to stretch it a bit)

Stir fry with AIP stir fry sauce (I found the AIP sauce recipe online- see below) I used arrowroot starch instead of tapioca flour because that is how I roll.

Actual week 1 of 52

 

There has been a lot of disease and pestilence in the house this week. 


1. Eat 80% AIP Paleo

2. Try to get under 170 by 12/31/2022- I will weigh myself once per month on the first weekend of the month

January- 180

3. Change light fixtures

a. Change to recessed lighting

4. Fix the banister- tighten screws

5. Paint and stain the deck/fence

6. Fix the screen door

7. Fix the front door

8. Fix the front window

9. Fix the fence (gate)

10. Paint my office

11. Paint the wall in my daughter's room

12. Paint the house This may wait for another year

13. Read one spiritual book per month

15. Exercise at least once per day unless sick or snow (lol)

Weekly Highlights

Hello world! Today I organized 1.5 cabinets with all of the rest to go. I did not realize that there were so many cabinets to go through. I would show you the before and after, but no one really wants to see that... do they? 


I think I am going to start working toward my business analyst certification this year. It will help me if anything happens to the sweet gig I have now.

 It has snowed.... again. Why? Why? Well.. apparently it is January and it snows in January. The dog and I both agreed that we would wait to go on a long walk until after the snow was mostly gone.
