What we Spent; What we ate week 4 of 52

 I have a goal this year of only spending 3000 OR LESS on groceries while also using up things in my freezer/pantry. I will recap the week at the beginning of next week.


We spent:

23.78 at Harris Teeter

24.35 at Aldi

in total 48.13

We ate:

One pan Egg Roll pg 121 (autoimmune protocol comfort food cookbook)

Italian Wedding Soup pg 74 (autoimmune protocol comfort food cookbook)

Marinated chicken bits with veggies

Lots and lots of leftovers

That is the plan and I cannot wait to update this to see what I have actually spent.

Week 4 of 52 big adventures

 My theme word for 2023 is Adventure, and to that end, I have some goals for 2023:


Adventure

  • Take a trip with a girlfriend to NYC and see a play in JanuaryTrip was amazing
  • Go camping

  • Go fishing

  • Hike the Billy Goat Trail- I completed part c of the Billy Goat Trail this year and I am calling this done after falling twice (it rained the day before)

Health

  • Beat the you vs the year 2023
    • I am already at 83 km and 8% completed
  • Eat 75 %  AIP- I would call this a B+.  My husband bought some bbq corn chips and I will just say I won't be having any more.
  • Get down to 165 before the wedding in June-Nothing to see here... I am so bloated I could not even walk the dog this morning much less get near a scale

Financial

  • Save 60k in long term emergency fund- May have a tax emergency, so this may be on hold until after April
  • Read ten books I already own
    • Something to Believe In by Jenny B Jones
    • Can't let you go by Jenny B Jones
    • Forever your girl

  • Only spend 3000 on groceries for the year
    • 214.90 in total spent for the year
  • Pay extra down on the house- 500 extra sent in with last paycheck; however this will be on hold until after April

Spiritual

  • Read six spiritual books- I bought a book - more to come in February
  • Meditate daily- I have to do better at this, I would give myself a B

Adventure

  • Take a trip with a girlfriend to NYC and see a play in January- Trip was amazing
  • Go camping

  • Go fishing

  • Hike the Billy Goat Trail- I completed part c of the Billy Goat Trail this year and I am calling this done after falling twice (it rained the day before)


Health

  • Beat the you vs the year 2023
    • I am already at 58 km and 5% completed
  • Eat 75 %  AIP- I would call this a C (going on a trip does not help me). Next week should be pretty fire though
  • Get down to 165 before the wedding in June-Nothing to see here...


Financial

  • Save 60k in long term emergency fund- May have a tax emergency, so this may be on hold until after April
  • Read ten books I already own
    • Something to Believe In by Jenny B Jones
    • Can't let you go by Jenny B Jones
    • Forever your girl

  • Only spend 3000 on groceries for the year

What I spent, What we ate week 2 of 52

   I have a goal this year of only spending 3000 OR LESS on groceries while also using up things in my freezer/pantry. I am going to keep a list of what I spend each week/month as well as a meal plan (and then recap it each week to see how we actually did). This did not work out so well. It was annoying to do an update for every single meal and did not allow as much flexibility. Therefore, I will just recap the week at the beginning of next week.

Health Update

 Hello all,

If you don't remember, 2022 was the year I spent in and out of the hospital and doctor's visits. I am fine now, but it gave me a new appreciation for health. I cannot believe I took my health for granted all of these years. 

At the end of the year 12/30, I was told I no longer had to go back to my surgeon's office. They let me know that if I had a recurrence of symptoms to make an appointment, but that I was okay to live my life. I just wanted to say that is the scariest thing I could hear, but I am going to do my best to make the most of the life I have left (I am 44 looking at 45 later this year, just a spring chicken).

This year, I am going to have some new adventures and try to get out a bit more. What are you looking forward to this year?

  • Take a trip with a girlfriend to NYC and see a play in January- Can't believe it is next weekend!! Hotel and Broadway play tickets secured.
  • Go camping

  • Go fishing

  • Hike the Billy Goat Trail- I completed part c of the Billy Goat Trail this year and I am calling this done after falling twice (it rained the day before)


Health

  • Beat the you vs the year 2023
    • I am already at 22.15/1023 1% completed
  • Eat 75 %  AIP- I would call this a B-. Doing well, but could be better
  • Get down to 165 before the wedding in June- progress is slow


Financial

  • Save 60k in long term emergency fund
  • Read ten books I already own
    •  Something to Believe In by Jenny B Jones

  • Only spend 3000 on groceries for the year
    • 82.57 in total spent for the year- Still doing well
  • Pay extra down on the house- 500 extra sent in with the mortgage payment

I spent 36.23 at Aldi.


On the menu this week:

Saturday- Porterhouse steak from the 1/2 cow we bought earlier in 2022.

Update: We actually ate this on Saturday and it was delicious

Sunday: Chicken and veggies

Update: I made a bacon chowder after hiking the billy goat trail part c (I needed comfort food)

Monday: Meat loaf muffins and roasted veggies

Update We did have meat loaf muffins, but we had mashed potatoes instead. I also made chicken soup while prepping tomorrows dinner :)

Tuesday Mini Mediterranean Chicken Skewers

Update: We ate them and they were delicious

Wednesday Breakfast Taco Bowls

Update: Moving this meal to next week, we had leftovers

Thursday Leftovers

Update: We had leftovers again

Friday- Fish

Update: We had a date and had Pho

Saturday Duck with Brussel sprouts 

Update: We had fish AH (Amazing Husband) cooked and helped me clean out the freezer
